When I asked some of the folks on my Facebook page if they fish on Thanksgiving I found out that for many it's a yearly tradition (I wish it was for me!). One friend, Mark Carstens of VooDoo Tackle, replied with this "Fresh Rockfish every turkey day. Then home to deep fry some turkey and rockfish nuggets." (For those of you who are wondering rockfish = striped bass). Striper nuggets sounded so good that I got the recipe from him to share with you here:
First, catch a few of these (if your not in the striper zone most other fish will do I'm sure. No that's not a pic of me. All pic supplied by Mark):
1. Take your striper fillets and cube them to small bite size chunks
2. Place nuggets into a bowl and fill it with with the beer of your choice and let soak for up to 4 hours in the refrigerator. (Mark uses Miller Lite)
3. The batter: Mix 1lb corn meal, 1 box Pancake mix, 1 jar of pepper, 1 jar of Lawreys seasoning salt, Cajun spices to taste. "You can use whatever spices you want to make it as hot as you like. I have this one spice called Slap Ya Momma which you can get online."
Once your oil hits 350 degrees start dropping the nuggets into the powder mix and start frying until golden brown.
As a bonus, Mark also suggest this:
Take your fillets and make them small strips, soak them in beer for about an hour, then soak them in a few eggs, next dip them in crackers (Saltines work great). Fry in a hot skillet with butter. Season to taste. Brown each side and serve.
